My Mum's Plum Crumble Slices
This recipe is taken straight out of my mother's 1970's German cookbook, "Backen Macht Freude" by Dr. Oetker - Baking Brings Joy. It's a deeply thumbed copy with her notes in the margin and lot of buttery stains. Of course it's filled with lots of memories too.

These golden, jammy plum slices are a sweet treat that feel like home. The crumble celebrates the natural sweet-tart flavour of ripe plums and the crisp golden topping is impossible to resist. Â
Simple, comforting and perfect with a dollop of creme fraiche or vanilla ice cream for added indulgence.



RECIPE
Ingredients:
200g caster sugar
400g plain flour
1 teaspoon salt
1 teaspoon baking powder
225g cold unsalted butter
1 large egg
1 - 2 kg fresh plums
How To:
Heat your oven to 190°C/ 375°F

Either coat a 9 x 13 inch pan with butter or non stick cooking spray and press a large piece of parchment paper across the bottom and along the sides of the pan for easiest removal.

In a large bowl, combine together the sugar, flour, baking powder and salt. Use a fork or pastry cutter to work the butter into the flour mixture until a crumbled texture forms, then stir in the egg.

The dough will be crumbly. Pat half of the dough into the prepared pan.

Wash and de-stone the plums. Then cut the plums in quarters and lay them in rows, skinside down on the dough. Crumble over the remaining dough mixture.

Bake in the pre-heated oven for 45 minutes or until the top is slightly brown. Cool completely before cutting into small squares.
