The Best Honey Cake Recipe Ever 🍯

DB's Delicious Honey Cake

 

This is a real family favourite which I'm delighted to share as I get asked for this recipe every time I bake it.
 
Whether you're preparing for Rosh Hashanah or just want a delicious, comforting cake for a 4pm pick-me-up this works a treat.
 
Everything is prepared in one bowl, making the preparation super easy. And the nutmeg and cinnamon spices add a gorgeous autumnal fragrance to the kitchen while it's baking. 
 
It will stay moist for one or two days (it even tastes better after a day or so) and is the perfect accompaniment to an afternoon cup of tea. I can't wait for you to try it!


Ingredients:

170g golden syrup

85g sugar

2 tablespoons of treacle or molasses

225g self raising flour

1/4 teaspoon bicarbonate of soda

1/4 teaspoon baking powder

90ml vegetable oil

2 eggs

3/4 cup warm water

1 tablespoon cocoa powder

2 tablespoons black coffee 

1 teaspoon cinnamon

1 teaspoon nutmeg 

2 teaspoons ground ginger

One stem ginger finely dice 

 

How To:

Add the sugar and syrups to a bowl and mix with a whisk. Next add the oil and continue to mix. 

Add the flour and the rest of the dry ingredients plus the stem ginger and mix.

Finally add the water. When smooth add to a well oiled baking tin and bake at 170C/ 350 F for 1 hour and 20 minutes. 

Leave to cool in the tin before releasing. Leave to cool for at least 30 minutes before tucking in!

 
DB Tip:
Don't overmix the batter. This will ensure you have a moist cake, not a dense and dry cake.
