Its the first night of the Jewish festival of Chanuka and we love to embrace the festival by lighting our menorah. Each night we light one more candle until on the last night all 8 are lit. My children made ones from clay when they were smaller and we love getting these out every year
We also celebrate by eating friend food. Donuts are always fun to make or buy and my children especially love Latkes. These are like American hash browns, German Reibekuchen or Swiss Roesti.

Recipe for Latkes
3 Large potatoes, peeled and grated
2 eggs beaten
pinch of salt
2 tablespoons of potato flour
vegetable oil or coconut oil for frying
Once the potatoes have been grated its important to soak them in water, releasing the starch. do this a few times until the water runs clearer. Then squeeze out as much of the excess water using a tea towel.
Put the potatoes in a bowl and add the egg, salt and potato flour and mix. put a frying pan on a medium to high heat and add a good amount of oil so that the entire surface of the pan is covered. Then take a large dollop of potato and pop in the pan. tab a spatula to press down flat the mixture and allow to fry until golden brown, then turn over. I fry three at the same time. Place on a kitchen towel to soak up the grease and serve hot with sour cream and apple sauce.
