AUGUST RECIPE 🌿

Nam Jim dipping sauce recipe by Kate Trelawny

Kate Trelawny, aka @kate_the_cook cooked the most delicious dinner for my teal diner launch at home. Frustratingly the guests actually ate all their food. Meaning there were no left overs to delight in.
 
However Kate did mistakenly leave her old Kilner jar behind with some of her delicious spicy green dipping sauce. Originally made to have as an accompaniment with her Thai vegetable rolls, I promptly used the sauce on everything. From salmon steaks and sea bass fillets to fried rice or with sweet potatoes.
 
Packed with freshness and zing and a light chilli kick, it’s the most perfect addition to a summer meal,

 RECIPE
 
Nam Jim Sauce
 
6 x juiced limes
2 x heaped tbsp golden castor sugar
2 tsp salt
2 x green chilli
1 x bunch washed corriander inc. stalks
1/2 bunch of mint, leaves only
 
Blend until smooth
